Rica Rica is the leaf of a shrub of the same name that grows in the Chilean altiplano. It's produced by Atacameño and Aymara communities under "Fair Trade" principles. It's very versatile in the kitchen, with primarily minty notes but also hints of rosemary, mate and basil, among others. In savory cooking, it's ideal with chicken, fish, lamb, salads, seafood and pasta. In sweets, it works beautifully in a brownie and with chocolate, but it reaches its peak in pisco sour, where it's most famous.
